It is a great recipe for hot summer days. Anyway, I like it all seasons. You can have it as a main or side dish. This recipe goes well with fish or meat, whatever you like.

I do not like cooking on hot summer days. I prefer cold refreshing dishes. This one is based on a Turkish recipe. You do not need a lot of ingredients and it is done in a couple of minutes.

Here comes a drink to cool down on summer days. It should be a soup first and turned out to be a delicious and refreshing drink… I prefer solid food to drinks which replace a meal. But in this case I skip the solids.

Green Smoothie
I like it really, really green. But in the winter season I add some frozen berries from time to time. For me everything green is allowed that my nose likes to smell and my instinct accepts. I easily find out what doesn’t work for me: I just cannot smell it while drinking. Chives doesn’t work even if I love fresh chives. I love to add some lime juice. If the Green Smoothie is my lunch I add a half of a can of coconut milk. The fat keeps me satisfied until dinner. I love it!
Mücver – Zucchini Patties with Cream from Feta
It is a light, delicious, summery Turkish recipe which I slightly changed. As I am not a huge fan of green zucchini, I go for the white alternative. This is really a different taste. I love it! I tell you: Try those if you are not happy with green zucchini.
Roasted Carrots and Parsnips
Hungry but short in time? In this case roasted veggies are always a great option. Just preheat the oven, peel the veggies, place them in the oven. While they roast you can do other things. I appreciate this very much. Serve these with a lemon or mint yogurt. Meat goes well, too.
Lentil patties
Lentil patties… yes, they will be a little bit dry. Just eat them never ever without yogurt or curd – I like both especially with fresh chives. They are hearty and for me a perfect breakfast.
Carrot-Parsnip-Purée
Yummy. A somewhat sweet purée quickly prepared. Definitely filling. I would say it is perfect for the cold season. You can enrich it with chestnuts.
Cauliflower Soup
A soup. Again. Easy to prepare. You can eat this soup hot, warm or cold. Double the recipe and fill the freezer. Soups are just great. I prefer this soup with seared chicken.
Roasted Sweet Potato with Lime
I did not care about the sweet potato for a long time. And it was not clear to me at first if I would like it. Meanwhile the sweet potato is frequently seen at my menu. Well, this easy recipe offers a different kind of a sweet breakfast. Or just have it for lunch.
Roasted Red Beets
If you are not a big fan of red beets, maybe you will be soon. As the red beet should have a second chance, too… I urge you to try this way of preparation.
Celery Root Puree
When it comes to fish this purée is one of my favorite side dishes. It is very easy to prepare. Leftovers I keep in the fridge.

I love the squash season. This recipe is tasty, hearty and easily done. Just roast the squash in the oven with rosemary and red onions. Serve with yogurt, meat or eggs – whatever you prefer.
Spaghetti Squash with Hazelnuts, Almonds and Parsley
Unfortunately the squash needs quite a while to roast. But for me it is worth it. That’s why I like to recommend this recipe.
As this squash has not the typical squash-flavor (in my opinion) this recipe could be doable for people who do not like squash that much.
