Well, black beans do not prettify dishes if we talk about the color. But it doesn’t bother me in this case as I like this soup very much for breakfast. Indeed, for breakfast.
Enjoying delicious food. Best without regrets and easy to cook. That is what I am looking for every single day.
If you eat the LOGI way or Paleo or you just prefer a moderate intake of carbohydrates and/or healthier choices of carbs, here you will certainly find something suitable, too. (Who will not give up on potatoes, noodles, etc. simply add those.)
I certainly will not forget to fill "Baking" as well as "Treat and Nibble" with recipes!
As I avoid carbs from e.g. legumes and rice at dinner and also grains in the morning, maybe the category "Breakfast" will offer you surprising options.
Note:
Usually my recipes are made for two. (Leftovers will be eaten later.) I use almost exclusively top and bottom heat for the preparation in the oven.
Curried Chickpeas
For me nothing is wrong with a spicy breakfast. This chickpeas with curry served with some chilled yogurt are a breakfast as I like it. I do not miss a thing.
Sweet Potato Soup
The sweetness combined with a little spiciness is very tasty here. As I prefer to freeze soups for storing I always cook the whole quantity.
Chickpea Muffins
I do like chickpeas but need some different tastes. This recipe indeed is a different one. Those muffins are not sweet!
Sweet Potato Mash
This is one easy mash. Choose as much of the ingredients as you like. Just taste it and decide. It is that easy!
Purple Sweet Potato Mash
Very fancy color! How can I say it right… I like it because it is something different and very easily prepared. But I wouldn’t enjoy it every day. It is very filling because of the coconut milk.
Braised Fennel and Parsnip with Chestnuts
I love the taste of chestnuts. You can create hearty dishes in the cold season. They smell delicious. And if you use already cooked chestnuts they are easy to cook with. Roast Chicken with Fresh Thyme and Rosemary
I love, love, love roast chicken. I do not love to clean the oven afterwards. But that chicken is worth it! It is easily prepared. The flavor of the herbs and the lemon…delicious!
Dessert from Acorn Squash
One day I discovered that I really like puree from the acorn squash as a nice little dessert because the acorn squash is quite sweet. So I decided that I will have it not too seldom at my menu.
Pumpkin Spice Cake
I love the pumpkin season. This cake became my favorite. There is nothing more to say than: Just give it a try!
Quick Spaghetti Squash with Rosemary and Dried Tomatoes
This is my quick spaghetti squash recipe if I am short in time. But – yes, there is a “but” – the spaghetti squash should be thawed already. During the squash season I freeze one or two roasted spaghetti squashes as I usually don’t need a whole one. So I thaw the leftovers when needed.
Roasted Butternut Squash and Chicken with Sage
I often use butternut squash because it is just easy to prepare. You can peel it with a peeler. This is no effort at all.
Be careful with the sage if you do not know whether you like the taste or not. In this case I would say: Less is more.
Roasted Delicata Squash with Sage and Rosemary
Roasted delicata squash has a nice, not too sweet taste. I like to serve it with Greek yogurt combined with lime juice and dried mint. It goes very well with the delicata! Yum!
Pumpkin Soup with Coconut Milk and Ginger
Pumpkin in season… various shapes, colors and ways to prep. Of course I serve a pumpkin soup! Again: easy to make ahead and to freeze.
Hokkaido Stuffed with Mushrooms
As I couldn’t find an organic acorn squash I decided for Hokkaido. And I skip the rice from the original recipe. For me a perfect choice.
