I do not like cooking on hot summer days. I prefer cold refreshing dishes. This one is based on a Turkish recipe. You do not need a lot of ingredients and it is done in a couple of minutes.
Enjoying delicious food. Best without regrets and easy to cook. That is what I am looking for every single day.
If you eat the LOGI way or Paleo or you just prefer a moderate intake of carbohydrates and/or healthier choices of carbs, here you will certainly find something suitable, too. (Who will not give up on potatoes, noodles, etc. simply add those.)
I certainly will not forget to fill "Baking" as well as "Treat and Nibble" with recipes!
As I avoid carbs from e.g. legumes and rice at dinner and also grains in the morning, maybe the category "Breakfast" will offer you surprising options.
Note:
Usually my recipes are made for two. (Leftovers will be eaten later.) I use almost exclusively top and bottom heat for the preparation in the oven.
Frozen Pineapple Candy
Yum! Even if I am not a huge fan of sweet fruits… these little frozen pieces I do like. You know what?! It is just frozen pineapple. As I am reacting to the fruit acid of the pineapple, I like most that the acid seems to disappear in the frozen fruit.
Yogurt Drink with Cucumber, Honeydew Melon and Mint
Here comes a drink to cool down on summer days. It should be a soup first and turned out to be a delicious and refreshing drink… I prefer solid food to drinks which replace a meal. But in this case I skip the solids.
Yogurt Drink with Watermelon and Fresh Herbs
I wanted to prepare a melon sorbet. It was very delicious but too cold for my taste that day. So I added Greek yogurt. I loved the temperature and the taste! I let go the sorbet and go for the drink since then.
Chamomile-Yogurt Panna Cotta
My first thought was: Interesting, have to try it. Well, I did. But with different gelatin… I tested and tested and tested and I enjoyed always a delicious drink… Eventually it was the right amount of gelatin. Lucky me!
Mixed Berry Yogurt Popsicle
Of course you can use fresh fruits. I tested it with frozen (thawed) berries and was pretty happy about the result. So there is the possibility to prepare them also in the winter season. Maybe with a little bit of cinnamon or so. Yum.
Braised Chicken with Veggies
Usually I prepare more than I need for dinner when I decide for this dish. Why? Because of the intense taste on the very next day!
Kale Chips
Kale chips. Yummy, extremely yummy. I never expected that kale can taste like that! Besides it is a healthy substitute for potato chips. So there are no regrets with these. Just hop on your couch and enjoy!
Green Smoothie
I like it really, really green. But in the winter season I add some frozen berries from time to time. For me everything green is allowed that my nose likes to smell and my instinct accepts. I easily find out what doesn’t work for me: I just cannot smell it while drinking. Chives doesn’t work even if I love fresh chives. I love to add some lime juice. If the Green Smoothie is my lunch I add a half of a can of coconut milk. The fat keeps me satisfied until dinner. I love it!
Pomegranate: An easy way to open it.
Since I know this technique how to open a pomegranate, I have them regularly. As the season does not last very long I freeze several bags with kernels every year. With those I am able to bridge the time until the next season.
Chickpea Carrot Breakfast Balls
Something new for breakfast! I bake these in advance and store them up to two or three days in the fridge. Just rewarm them in a pan before serving.
Pumpkin Bread
For me it is more a cake instead of a bread. Nonetheless I do like it for breakfast from time to time. It comes with less gluten. Who needs to avoid it completely replace the spelt flour with a gluten free alternative and choose a gluten free baking powder.
Apple-Cinnamon Bundt Cake
Another weekend, another cake. Because of the cinnamon it is a taste of the cold season. I don’t care and bake this cake also in the summer. If you need more apples feel free to add more.
Mücver – Zucchini Patties with Cream from Feta
It is a light, delicious, summery Turkish recipe which I slightly changed. As I am not a huge fan of green zucchini, I go for the white alternative. This is really a different taste. I love it! I tell you: Try those if you are not happy with green zucchini.
Mango with Coconut Popsicle
There is always an urgent need for a popsicle in the summer! As I like to know what’s in it… I prepare it myself. It is fun and very easily done!
